Cambridge Bagel Shop Ranks Among Best In US (Outside New York), Report Says

A bagel shop that uses a decades-old sourdough starter is getting new accolades from a revered foodie magazine.

Bagelsaurus, a bagel bakeshop and café located at 1796 Massachusetts Avenue in Cambridge, was listed among the top bagel shops in the US by Bon Appetit.

Bon Appetit noted that shops have been producing creative types of bagels (ie, not just New York-style) and made a list of just over 20 of the best non-NY bagel shops around the country.

Bagelsaurus began in 2013 as a weekly pop-up in Cutty's sandwich shop in Brookline. The same bagels are now being produced in a brick-and-mortar shop in Cambridge, with a line that often wraps around the block, according to Bon Appetit. 

Owner Mary Ting Hyatt specializes in handmade bagels that are slow-fermented over the course of 24 hours to produce a chewy, crackly crust. 

The shop has an array of daily daily that include classics like sesame, everything, and onion, as well as more unusual flavors like pretzel and black olive. 

Depending on what day of the week you get there, Bagelsaurus offers specials that include chocolate chip pretzel bagels (available on Tuesday), cheddar garlic (available Friday to Sunday, and bialys (available Tuesday to Friday). 

Diners can stack their bagels with a variety of spreads and toppings, or can opt for a curated bagel sandwich, like the T-Rex, which comes with housemade almond butter, banana, honey, and thick-cut bacon.

Bagelsaurus is open Tuesday through Friday for online and walk-on ordering, and open on weekends for walk-in ordering.
